Ingredients
Variety of Vegetables
(cut into Julienne/strips)
Tortillas / Left Over Rotis or Chappati
Ripe Avocado
Avocado Oil / Olive Oil
Cheese
Sour Cream / Yogurt
Vegetarian Mayonnaise
Hot Sauce / Schezwan Sauce to make it spicier
Salt
Black Pepper
Lemon Pepper - makes it more delicious
Let's Get Going
Cut all the fresh vegetables in Julianne (Strips) and gather them in the bowl
Add Salt, Lemon Pepper (Mustard Seed Powder), Black Pepper and Avocado Oil (or Olive Oil)
Now mix all the spices well in the vegetables and saute this mixture for 2 minutes on medium to high flame. Transfer this cooked fillings to a large bowl and add cheese
Now fill the tortillas with fillings and fold them to form the half-moon shape
Melt 1/2 teaspoon butter or oil in the skillet. Butter makes the end result much crispier. Avoid overage of butter as too much fat will make it soggy
Place the tortillas in the pan and let it sit until it turns golden brown on both sides
In the meantime, mix the sour cream and hot sauce. Put this mixture into a funnel.
Prepare the avocados slices for serving on the top of Quesadillas. Add a pinch of salt on avocados slices
Your Quesadillas should be ready by now. Time to assemble. Slide the quesadillas onto a cutting board and cut into wedges
Apply the Sour cream mixture on top of quesadillas. Decorate with slices of Avocados to make it more delicious and heart-healthy.
Get creative with garnishing your quesadillas with coriander leaves, parsley, lemon shavings and so much more. Just make sure to complement the taste of this Classic Mexican Recipe
Notes
Instead of fresh vegetables, You can use cooked vegetables or leftovers. Just warm them for a bit in skillet or microwave
Mix herbs or seasoning can also be used with spicey mixture
The sour Cream mixture can also be prepared with yogurt, white sauce, or any other spicy sauce like Schezwan sauce
