Ingredients

Home Made Quesadillas

Variety of Vegetables

(cut into Julienne/strips)

Tortillas / Left Over Rotis or Chappati

Ripe Avocado

Avocado Oil / Olive Oil

Cheese




Sour Cream / Yogurt

Vegetarian Mayonnaise

Hot Sauce / Schezwan Sauce to make it spicier

Salt

Black Pepper

Lemon Pepper - makes it more delicious





Let's Get Going


  • Cut all the fresh vegetables in Julianne (Strips) and gather them in the bowl

  • Add Salt, Lemon Pepper (Mustard Seed Powder), Black Pepper and Avocado Oil (or Olive Oil)

  • Now mix all the spices well in the vegetables and saute this mixture for 2 minutes on medium to high flame. Transfer this cooked fillings to a large bowl and add cheese


  • Now fill the tortillas with fillings and fold them to form the half-moon shape

  • Melt 1/2 teaspoon butter or oil in the skillet. Butter makes the end result much crispier. Avoid overage of butter as too much fat will make it soggy

  • Place the tortillas in the pan and let it sit until it turns golden brown on both sides

  • In the meantime, mix the sour cream and hot sauce. Put this mixture into a funnel.

  • Prepare the avocados slices for serving on the top of Quesadillas. Add a pinch of salt on avocados slices


  • Your Quesadillas should be ready by now. Time to assemble. Slide the quesadillas onto a cutting board and cut into wedges

  • Apply the Sour cream mixture on top of quesadillas. Decorate with slices of Avocados to make it more delicious and heart-healthy.

  • Get creative with garnishing your quesadillas with coriander leaves, parsley, lemon shavings and so much more. Just make sure to complement the taste of this Classic Mexican Recipe

Notes

  1. Instead of fresh vegetables, You can use cooked vegetables or leftovers. Just warm them for a bit in skillet or microwave

  2. Mix herbs or seasoning can also be used with spicey mixture

  3. The sour Cream mixture can also be prepared with yogurt, white sauce, or any other spicy sauce like Schezwan sauce

Cilantro – finely chopped



Healthy and Delicious Guacamole

Tomatoes – 2 (finely chopped)


Extra virgin olive oil – 1 tbsp

Salt as per your taste or 1/4th teaspoon


Black pepper – little bit (pinch)





Let's Get Going


  • First finely chop the onion and put them into a bowl. Then add lemon juice to the onion and keep it aside for 5 minutes.

  • Until then finely chop the cilantro or parsley or coriander whatever you have.

  • Now it’s time to roughly chop the tomatoes, if you don’t like the seeds then scoop them out and try to get rid of tomato’s water because its watery and it can be a mess for guacamole.

  • Let's prepare the main ingredient: Avocado - scoop out the avocado and add it into another bowl. Now add some salt, black pepper to the avocado.

  • Now it’s time to make it greasy or fruity. For this, I am going to add a little bit of good extra virgin olive oil.

  • Now with the help of a masher slowly make it a little chunky

* do not make a paste out of it *

  • Add the chopped cilantro and tomatoes.

  • Time to add the chopped onion that we had kept aside

* make sure to spill out the lemon juice from the onion *

  • It is just delicious and healthy, and you probably haven’t ever eaten anything like it.

  • You can eat or serve this Guacamole with your favorite chips.

*Avocados are great source of vitamin C , E, K and B-6 as well and are full of good fat that is healthy and keep you full and satiated for a long time

Lets Rock It


  • Take any fruit of your choice

  • Use Mixer, Grinder or Juicer to extract the fruit juice.

  • Use strainer to filter the pulp specially for fruits like Pineapple and Orange. You can use spoon and a little water to get it going. (But it is totally optional, You can use the unfiltered juice with pulp: Depends on your taste)

  • To make it more nutritious, you can add finely grind dry fruits.

  • Add Sugar and Mix it well. This is also optional per your taste but I like to make Popsicle, a little extra sweet for my kids (You can use honey instead of sugar for diabetics).

  • Transfer the juice in ice cream molds. You can also use small glasses or any small container to give a creative shape to your Popsicle.

  • When using simple glasses or any container available to home, I recommend to use foil paper to cover it like a lid to avoid the formation of ice crystals on the top.

  • Create a small hole in the center of foil paper and insert the ice cream stick.

  • Time to freeze.

  • After 5 to 6 hours, take the molds out. Rinse the molds with water to pull the Popsicle out.

  • keep rinsing the mold. You need to be extra careful while pulling out the Popsicle.

**I happened to pull only the stick out once. **



Your homemade real fruit, juicy and the healthiest Popsicle are ready to be served.
